Stille Nacht is the Christmas seasonal offering from the renowned De Dolle Brewers. It is only made once a year, but is certainly worth the wait. It pours a cloudy golden orange, with a fluffy white head that lasts and lasts. The nose is full of sweetness, light fruits and spices.
The flavour is amazing. Sweetness is at the fore, along with a strong malty backbone. Apricots, peaches and honey, along with clove, nutmeg and a gentle tingle from the Belgian yeast. Despite the sweetness, the beer is well balanced, and leaves a long, rich aftertaste.
This is one of the highest density beers brewed in Belgium. As such the beer is thick and heavy – definitely a sipper to sit back and savour. It also cellars very well for over a decade.
