Here’s something a little different from a small French brewery located in the heart of the Chablis wine region.
Brasserie Du Chablis was started by two cousins who grew up in the Burgundy area. Surrounded by wine producers, they decided to offer something a little different. A brewery producing fully organic beers, rich in the terrior of the region.
The name of this beer translates as ‘The Priory Garden’, and hints at the nature of the beer. And it doesn’t take long to work out this beer is all about the herbs and spices.
The aroma burst with a range of spice character, most notably aniseed, licorice root and fennel. They all follow through in the flavour, mixing with a malty, caramel body to offers a level of sweetness without ever getting near to cloying.
A lively carbonation lifts the mouthfeel, with the beer finishing pretty dry and kind of quickly in a way. As your mouth dries, the herbal character comes back and lingers until the next sip.
